The classic Minnesotan meal. I feel a little silly every time I have to search for hotdish recipes. I blame my parents. They didn't make much hotdish when we were growing up. I've been making up for lost time by eating pretty much any kind of hotdish I can find. Here is one I came up with all by myself.
Jess' Hotdish
1 lb ground beef
small onion
garlic (minced)
can of corn (drained)
diced tomato
can of mushrooms (drained)
3 c pasta
2 c beef broth
6 slices of smoked provolone
4 Tbl ranch seasoning
paprika
oregano
rosemary
tarragon
red pepper
Brown beef with onion and garlic. Drain off fat. Combine beef broth, mushrooms, tomatoes, and corn in pan with the beef. Stir in seasonings. Add noodles. Bring to a boil and reduce heat. Cover and simmer until noodles are tender (about 10 minutes). Remove from heat. Layer cheese on top in a single layer. Cover. Allow cheese to melt. Serve.
