This was Parker's introduction to Orzo. I had a recipe that called for something similar to be baked in the oven. But I wanted something faster. I'm a fan of one pan meals if I can help it.
Chicken and Tomato Orzo
1 1/4 C orzo
3 chicken breasts cut into pieces
1 can of chicken broth
1 can of diced tomatoes (drained)
2 cloves garlic (chopped)
2T oil
basil/oregano/thyme
grated Parmesan cheese
heat oil, garlic, and herbs
cook chicken until browned
saute orzo with chicken 2 minutes
add broth
simmer until most of the liquid is absorbed
add tomatoes
simmer 5 minutes
remove from heat
add parmesan, cover, and let rest 5-10 minutes
serve.
