Dad's Chili
2 large cans tomatoes
2 15oz cans tomato sauce
1 to 1 1/2 lb burger
2-3 15oz cans beans (bushes best dark red kidney)
3-4 tbl spoons chili powder
1/2 tsp salt
1/2 tsp sugar
1/2 to 1 tsp black pepper
1/2 tsp cheyenne pepper
1/2 to 1 tsp cumin
1/2 to 1 tsp oregano
1/2 to 1 tsp paprika (smoked is really good)
green pepper
onion
2-3 stalks celery
garlic, much as you want , at least 2 cloves
hot pepper/s if you like
I like the veggies crunchy so I cut them in large pieces and barely cook them. I heat everything to just barely a simmer, let cool, refrigerate over night and re-heat to eat.
brown burger, season if you like but I usually don't, drain off fat, if you don't season the dog likes the fat!
I like to cut up tomatoes so I put them in the pot 1st, and slice them into chunks
add tomato sauce
rinse beans and add
add all spices and stir
add burger and veg and heat to a very low simmer. If you are going to cook and eat in same day, let simmer at least 30 minutes. **Don't boil/burn it. I think it's one of those best re-heated dishes.
You can cut everything in half to make a smaller batch.
I sometimes mix beans, 1 dark red, 1 light red, 1 pinto.
the sugar is important, it helps blend the flavors (must be a chemical thing) but be careful not to add too much, 1/2/ tsp is generous. A pinch might be just right.
**I never really measure anything so these are estimates but I tend to be on the high side on amounts of spices
