I LOVE corned beef. It's so easy to make and it's delicious in so many ways. This year for St. Patrick's day I made 7.5 lbs worth of the stuff.
I had plenty of leftovers which was my intent. I wasn't feeling up to going to the store yesterday so I made Reuben tacos with homemade Thousand Island dressing.
For the corned beef I buy the premade stuff. I get the square cut and not the triangle if I can help it. The squares are less fatty and easier to slice.
The tacos and Thousand Island were borne of necessity and/or laziness. Whatever you want to call it. I didn't want to go to the store so I found a recipe that would incorporate what I have on hand.
Corned Beef - This is for one roast. I made two so I doubled everything. I've used this method for years. It always turns out great.
Corned Beef Brisket
1/2lb carrots cut 2-3" lengths
5-6 red potatoes slice the larger ones in half leave the smaller ones whole
Place carrots and potatoes in crockpot.
Place corned beef on top with the fatty side up.
Fill crock pot with water so it is just covering the roast. Add the seasoning packet that comes with the beef.
Cook on Low 8 hours
Reuben Tacos
Flour Tortillas
Corned beef
Sauerkraut
Shredded cheese
Thousand Island dressing
On the tortilla place corned beef, sauerkraut, and a light sprinkle of cheese.
Microwave 45 seconds
Top with 1 Tbl Thousand Island dressing
Thousand Island Dressing - this is NOT the pink junk you find at the store. I made this because I didn't want to go to the store and we were out of ketchup. I scaled mine waaaay down. This makes almost exactly 1 pint
1 hard boiled egg (I only had pickled ones)
1Tbl +1 1/2 tsp Worcestershire sauces
1 tsp sugar
1Tbl + 1 1/2 tsp white vinegar
1 1/2 c mayo
1/4 c + 1tsp sweet relish
3 Tbl chopped black olives
Chop the egg well. Mix everything thing together in a bowl and serve.
Delicious!
